Hmmm. But are you using the kind of lasagna noodles that don't have to be boiled first? I've seen boxes that advertise noodles that don't have to be boiled, but I always get the kind that does need to be boiled (and, ya know, I boil them al dente and the sauce takes care of rest.)
I didn't get the impression there was really enough moisture in the cheese and spinach to fully cook the pasta. It was overdone, but not really so mushy as to be falling apart. I'd be leery of trying totally uncooked shell pasta just b/c it seems like it could go Horribly Wrong. And then I'd be facing no dinner.
