Jan's Mud Cake
A gem from one of the home-made community organisation cookbooks my Mum's collected over the years. I've no idea who Jan was, but thanks, this is brilliant cake! (Very happy, Jan!*)
It's not a true mudcake, it's lighter and... sort of like brownies, especially if you cook it in a lamington/brownie tin.
Accessibility: this cake is very easy. It can be mixed easily by hand, or with electric beaters, depending on your equipment and needs. It's a one-bowl recipe; you do have to lift it in and out of the oven, what with it being cake and all.
Dietary: I cook this on margarine with no trouble, so vegan versions should work fine, with some sort of egg replacement. I've never tried it on GF flour, but if anyone wants to try and let me know, I'd be interested to know how it works out!
Combine and stir until melted:
- 1 cup boiling water
- 1/2 cup cocoa
- 250 grams butter/margarine
Stir in:
- 1 tsp vanilla essence
- 2 cups white sugar
Whisk in:
- 1 tsp bi-carbonate of soda
- 1/2 teaspoon sour cream if you have it to hand (works just fine without)
- 2 eggs
And then whisk in:
- 2 cups plain flour
- 1 tsp baking powder.
Place in a greased & lined tin - I recommend a lamington tin if you have one (a large, deep slice / brownie tin? Something about 1 inch deep, at any rate).
Bake in a moderate oven. Cooking times are going to vary depending on the depth of your tin. Jan's recipe said 40-50 min for a 25cm round cake tin; my lamington tin takes about 30 minutes.
