Crispies Cookies

The name isn't a typo, it's a nod to a the main ingredient, which is what gives the cookie a special texture.
Crispies Cookies
1 cup butter, room temperature
¾ cup granulated white sugar
¾ cup firmly packed dark brown sugar
2 eggs
1 teaspoon vanilla extract
2½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
2 teaspoons cream of tartar
2½ cups crisped rice cereal (Rice Krispies/Rice Bubbles)
Preheat oven to 375°F/185°C.
In a large mixing bowl, cream together the butter and sugars with an electric mixer, beating on a high speed until light and fluffy. Add the eggs and vanilla extract and continue to beat until fully incorporated.
In a separate bowl, sift the flour, baking soda, salt and cream of tartar together. Add this dry mixture to the butter mixture and mix well by hand until fully blended. Add the cereal and stir to evenly distribute.
Drop the dough by rounded teaspoonfuls onto an ungreased cookie sheet and bake at 375° for 10 minutes. Cool on a wire rack for a few minutes before eating.
