Very easy recipe, great for the fall and winter seasons. My mom emailed the recipe under the title: Excellent Cookies (thanks, Mom). I didn't realize exactly what I was making until the end! They look and taste just like ginger snaps.
3/4 c. butter
1 c. packed brown sugar
1 egg
1/4 c. light molasses
2 1/4 - 2 1/2 c. flour
2 tsp. soda
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ground cloves
Mix moist ingredients, followed by dry ingredients. Add additional flour if too sticky. Roll dough into walnut-size balls, then roll in additional brown sugar. Space balls on cookie sheet. Bake 10-12 minutes at 375. (Be careful about burning the bottom of the cookie -- I let mine cook for about 8 mins)
