I originally got this recipe from http://www.smittenkitchen.com, but I decided it wasn't quite peanut butter-y for my taste, so I altered it slightly. Plus I simplified the instructions, because I like to simplify instructions when baking. Also, the original recipe came with a frosting recipe that I've never made; I like it just fine without it, though. I pretty much copied it with very few alterations, so I hope it's not considered plagiarism, but in any case, the original recipe is here.
Peanut Butter Brownies
1 1/2 stick butter or margarine (I tagged this dairy-free because I almost always use margarine)
1 3/4 cups sugar
1 1/4 (or even 1 1/2) cups creamy peanut butter
2 large eggs plus one large yolk
2 teaspoons vanilla extract
2 cups all-purpose flour (I usually use at least one cup whole wheat)
1 1/2 cups chocolate chips
Preheat oven to 350F (175C).
Line a 13x9 inch baking pan with parchment paper and grease the paper.
Beat together butter and sugar until the mixture is light and fluffy, then add peanut butter and beat until it's all mixed together.
Beat in eggs and vanilla.
Mix in flour until just combined.
Mix in chocolate chips and then spread the mixture into the pan. Smooth the top.
Bake until brownies are deep golden, puffed on top and a wooden pick inserted in center come out with some crumbs adhering, 40 to 45 minutes.
Cool brownies on a rack.
Eat until you feel too sick to continue eating, or you run out (whichever comes first).
