Zucchini Cake

Aaaand best of all, beautifully simple!
- oven
- 2 bowls
- (electric) mixer
- rasp
- baking pan (e.g. one that's good for brownies) OR springform pan OR you can pour the batter into pretty much any sort of cake pan
- 300g zucchini
- 4 eggs
- 250ml neutral plant oil
- 1 sachet vanilla sugar or a good pinch of powdered vanilla
- 350g sugar
- 375g (wheat) flour
- 1 sachet baking powder
- 50g ground hazelnuts
- 4 tablespoons instant chocolate powder (or cocoa, if you like it less sweet)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda (=sodium bicarbonate)
- Icing:
- 1 cup powdered sugar
- 2-3 tablespoons orange juice
1. Wash, peel and grate the zucchini (not too fine.)
2. Mix flour, baking powder, baking soda, hazelnuts, cocoa and cinnamon.
3. Beat eggs with oil, sugar, and vanilla (sugar) into a foamy mix.
4. Add flour mix, beat to a smooth batter
5. Fold in grated zucchini.
Pour batter into baking or springform pan and smooth down the surface. Then bake for around 55min at 175°C.
If you like icing: Mix orange juice and powdered sugar for the icing, poke a few small holes into the warm cake with a fork, then coat with icing.
